A skillet dinner is one of the most useful meals to keep in your weeknight rotation. Everything comes together in one pan, cleanup stays manageable and you can build plenty of flavor without spending the entire evening in the kitchen.

Ground turkey is especially convenient because it cooks quickly and works well with vegetables, tomatoes and pantry seasonings. This version combines tender peppers, zucchini and rice with a lightly smoky tomato sauce for a complete meal that feels comforting without being complicated.

The trick is to give the turkey time to brown before adding the liquid ingredients. That extra contact with the hot pan creates flavor that carries through the finished dish.

Ingredients

1 tablespoon olive oil

1 pound ground turkey (93% lean recommended)

1 small yellow onion, diced

1 red bell pepper, diced

1 medium zucchini, diced

3 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon kosher salt, plus more to taste

1/4 teaspoon black pepper

1 can (14.5 ounces) diced tomatoes, with juices

1/2 cup low-sodium chicken broth or water

2 cups cooked rice, warmed

2 tablespoons chopped parsley or cilantro

Optional: shredded cheddar, lime wedges or hot sauce

Instructions

Heat the olive oil in a large, deep skillet over medium-high heat. Add the ground turkey and spread it across the pan. Let it cook undisturbed for about 2 minutes, then break it into small pieces with a wooden spoon.

Cook the turkey for another 5–6 minutes, stirring occasionally, until no pink remains and it begins to brown. Transfer to a plate if the skillet is crowded; otherwise push it to one side.

Add the onion and bell pepper. Cook for 4 minutes, stirring, until they begin to soften. Add the zucchini and cook 3 minutes more.

Stir in the garlic, smoked paprika, cumin, oregano, salt and pepper. Cook for about 30 seconds, just until the garlic is fragrant.

Add the diced tomatoes and broth. Return any reserved turkey to the pan. Stir well and scrape up the browned bits on the bottom.

Reduce the heat to medium-low and simmer uncovered for 6–8 minutes, until the vegetables are tender and the sauce has thickened slightly. Confirm the turkey reaches 165°F with a food thermometer.

Taste and adjust the seasoning. Spoon over warm rice and finish with parsley, cilantro or your preferred topping.

Kitchen tips

If you prefer a little heat, add a pinch of crushed red pepper with the spices. For a richer finish, stir in a small handful of shredded cheese just before serving.

Frozen chopped peppers can replace fresh ones, and leftover rice works perfectly as long as it is reheated until steaming hot. If the skillet becomes dry while simmering, add a splash of broth rather than extra oil.

To make the meal stretch, add a drained can of black beans during the final simmer. You will have a heartier skillet without much additional work.

Store leftovers in shallow airtight containers and refrigerate within two hours. Use within 3–4 days, reheating thoroughly to 165°F. This skillet is also a practical lunch the next day.
