Cooking with Tiffany: Pot Roast Gravy Bomb & Wachusett Country Lemonade Lager

Some meals are meant to be neat and delicate. This is not one of them.
This week on Cooking with Tiffany, we’re going all-in on comfort food with a massive oven-baked potato seasoned with olive oil and Lawry’s Seasoned Salt, split open and absolutely covered with tender shredded pot roast cooked into a thick gravy loaded with sautéed onions, peppers and mushrooms.
I call it the Pot Roast Gravy Bomb.
And because something this rich needs a refreshing partner, I paired it with an ice-cold Wachusett Brewing Company Country Lemonade Lager.
This is a hearty weekend dinner built around tender beef, thick gravy and a baked potato big enough to handle all of it.
Building the Pot Roast Gravy Bomb
The heart of the Pot Roast Gravy Bomb is the chuck roast, but the secret is that the meat and gravy aren’t two separate components. By the time this dish reaches the potato, that shredded beef has become part of the gravy itself.
Start by sautéing onions, peppers and mushrooms directly in the Dutch oven. Getting those vegetables going first allows them to soften and develop flavor before the roast ever enters the pot.
Next comes the gravy mix, followed by the chuck roast and water. The roast cooks right there in the gravy with those sautéed onions, peppers and mushrooms.
That’s important.
As the chuck roast slowly becomes tender, it’s cooking in the same gravy that will eventually cover the potato. The beef and vegetables aren’t being prepared separately and brought together at the end. They’re developing together in that Dutch oven.
Once the chuck roast becomes tender enough to pull apart, remove it from the gravy and shred it.
Then put every bit of that shredded pot roast right back into the Dutch oven.
Now the beef gets stirred through the gravy, allowing those tender strands of pot roast to become completely incorporated with the onions, peppers and mushrooms.
Toward the end, combine additional gravy mix with warm water until smooth and stir that mixture into the Dutch oven. This thickens everything until you have exactly what the Pot Roast Gravy Bomb needs: a rich, thick shredded pot roast gravy.

That’s what we’re putting on the potato.
Building the Potato
The potato gets plenty of attention of its own.
Take a large baking potato, wash and dry it thoroughly, and pierce it several times with a fork. Rub the outside with olive oil and season it generously with Lawry’s Seasoned Salt.
Place it on a baking sheet and bake at 425°F until the outside is beautifully roasted and the inside is soft and fluffy. A large potato will generally need around 50 to 60 minutes, with especially large potatoes requiring additional time.
Once the potato is done, place it on the plate and cut lengthwise through the center without slicing completely through the bottom.
Gently open it.
Now bring over that Dutch oven.
Spoon the shredded pot roast gravy mixture directly into the center of the potato. Get that beef and gravy down inside so it begins soaking into the hot, fluffy potato.
Then keep going.
Spoon more of that same shredded pot roast gravy mixture across the top, letting it overflow naturally down the sides and onto the plate.
That’s the presentation.

Pot Roast Gravy Bomb
Ingredients
- 1 chuck roast
- 1 large baking potato per serving
- 1 onion, sliced or diced
- 1 bell pepper, sliced or diced
- Sliced mushrooms
- Brown gravy mix
- Warm water, as needed
- Olive oil
- Lawry’s Seasoned Salt
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 425°F.
- Wash and thoroughly dry the baking potato. Pierce it several times with a fork.
- Rub olive oil over the outside of the potato and season generously with Lawry’s Seasoned Salt.
- Place the potato on a baking sheet and bake for approximately 50 to 60 minutes, or until completely tender through the center. Allow additional time for an especially large potato.
- While the potato cooks, heat a Dutch oven and sauté the onions, peppers and mushrooms until they begin to soften.
- Add the brown gravy mix.
- Place the whole chuck roast into the Dutch oven and add enough water to create the gravy and cooking liquid.
- Season with salt and black pepper.
- Cook the chuck roast directly in the gravy with the onions, peppers and mushrooms until the beef becomes extremely tender and easily pulls apart.
- Remove the chuck roast from the Dutch oven, leaving the gravy and vegetables behind.
- Shred the cooked chuck roast.
- Return all of the shredded beef to the Dutch oven and thoroughly mix it back into the gravy.
- Combine additional brown gravy mix with warm water until smooth. Gradually stir it into the shredded pot roast and gravy toward the end of cooking until the mixture becomes thick and rich.
- Remove the baked potato from the oven and place it on a plate.
- Cut lengthwise through the center without cutting completely through the bottom, then gently open the potato.
- Spoon the shredded pot roast gravy mixture generously inside the opened potato.
- Continue spooning the same shredded pot roast gravy mixture over the top, allowing it to overflow naturally down the sides.
- Serve immediately while the potato, shredded pot roast and gravy are piping hot.
The Beer Pairing: Wachusett Country Lemonade Lager
For the Pot Roast Gravy Bomb, I paired this big comfort-food dinner with an ice-cold Wachusett Brewing Company Country Lemonade Lager.
And this is a pairing built around contrast.
The Pot Roast Gravy Bomb is unapologetically rich. The potato is big and fluffy, while the shredded chuck roast has spent its cooking time developing inside that gravy with onions, peppers and mushrooms. Once the beef is shredded and returned to the pot, everything becomes one thick, savory mixture.
Then that entire shredded pot roast gravy gets packed inside the potato and spooned over the top.
That’s a lot of richness in every forkful.
The Country Lemonade Lager takes things in another direction. Its lemon character provides a brighter, refreshing contrast alongside those deep beef and gravy flavors.
