Ingredients:
- 1 lb ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 cup canned black beans, drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (optional)
- Tortilla chips or tortillas for serving
Instructions:
- Cook meat: In a large skillet over medium heat, cook ground beef with onion and garlic until browned and cooked through. Drain excess fat if needed.
- Add seasoning & veggies: Stir in taco seasoning, black beans, and corn. Cook 3–4 minutes until heated through.
- Add cheese: Sprinkle shredded cheddar over the skillet. Cover for 1–2 minutes until melted.
- Serve: Top with sliced green onions and serve with tortilla chips or warm tortillas.
