Ingredients:

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup canned black beans, drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced (optional)
  • Tortilla chips or tortillas for serving

Instructions:

  1. Cook meat: In a large skillet over medium heat, cook ground beef with onion and garlic until browned and cooked through. Drain excess fat if needed.
  2. Add seasoning & veggies: Stir in taco seasoning, black beans, and corn. Cook 3–4 minutes until heated through.
  3. Add cheese: Sprinkle shredded cheddar over the skillet. Cover for 1–2 minutes until melted.
  4. Serve: Top with sliced green onions and serve with tortilla chips or warm tortillas.

Quick Tip: Add a dollop of sour cream or avocado for extra creaminess.
