Ingredients
- 1 pound bulk Italian sausage or ground beef
- 2 tablespoons tomato paste
- 1 small onion, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- 1⁄2 teaspoon kosher salt
- 1⁄4 teaspoon ground black pepper
- 1 can (28 oz.) crushed tomatoes
- 6 cups low sodium chicken broth
- 8 ounces dry mafalda or mini farfalle
- 1 cup shredded Italian cheese blend
- 1⁄2 cup ricotta cheese
Directions
- Step 1Heat a 4 quart saucepan over medium-high heat. Cook sausage or beef, breaking apart until browned and cook through. Add tomato paste, onion, garlic, Italian seasoning, salt and pepper. Cook 2-4 minutes until onion is softened.
- Step 2Add tomatoes and broth. Bring to a simmer and cook for 10 minutes. Add pasta; cook 7-9 minutes or until pasta is tender.
- Step 3Serve soup garnished with cheeses. Refrigerate leftovers.
- Step 4Make it a Meal: Serve with frozen garlic toast prepared according to package directions.
