Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- Salt & pepper to taste
- Red pepper flakes (optional)
- Fresh basil for garnish
Instructions:
- Cook shrimp: Heat olive oil in a skillet over medium heat. Season shrimp with salt and pepper, then cook 2–3 minutes per side until pink. Remove and set aside.
- Make sauce: In the same skillet, sauté garlic for 30 seconds. Add cherry tomatoes and cook 2 minutes until slightly softened.
- Add cream & spinach: Pour in heavy cream and Parmesan, stir until smooth. Add spinach and cook until wilted.
- Combine: Return shrimp to the skillet, toss everything together for 1–2 minutes.
- Serve: Garnish with fresh basil and red pepper flakes if desired. Enjoy over rice, pasta, or with crusty bread.
Quick Tip: For extra flavor, squeeze fresh lemon over the shrimp right before serving.
