Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Salt & pepper to taste
  • Red pepper flakes (optional)
  • Fresh basil for garnish

Instructions:

  1. Cook shrimp: Heat olive oil in a skillet over medium heat. Season shrimp with salt and pepper, then cook 2–3 minutes per side until pink. Remove and set aside.
  2. Make sauce: In the same skillet, sauté garlic for 30 seconds. Add cherry tomatoes and cook 2 minutes until slightly softened.
  3. Add cream & spinach: Pour in heavy cream and Parmesan, stir until smooth. Add spinach and cook until wilted.
  4. Combine: Return shrimp to the skillet, toss everything together for 1–2 minutes.
  5. Serve: Garnish with fresh basil and red pepper flakes if desired. Enjoy over rice, pasta, or with crusty bread.

Quick Tip: For extra flavor, squeeze fresh lemon over the shrimp right before serving.
