Ingredients
- 1½ lbs boneless chicken thighs or breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 lemon (zest + juice)
- ½ cup low-sodium chicken broth
- Optional: chopped parsley or spinach
Instructions
- Pat the chicken dry and season both sides with salt, pepper, paprika, and oregano.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and sear 4–5 minutes per side until golden. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Stir in lemon juice, zest, and chicken broth, scraping up the browned bits.
- Return chicken to the skillet. Reduce heat, cover, and simmer 10 minutes until fully cooked.
- Finish with parsley or wilted spinach if desired.
