Ingredients

  • 1½ lbs boneless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 lemon (zest + juice)
  • ½ cup low-sodium chicken broth
  • Optional: chopped parsley or spinach

Instructions

  1. Pat the chicken dry and season both sides with salt, pepper, paprika, and oregano.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and sear 4–5 minutes per side until golden. Remove and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds.
  5. Stir in lemon juice, zest, and chicken broth, scraping up the browned bits.
  6. Return chicken to the skillet. Reduce heat, cover, and simmer 10 minutes until fully cooked.
  7. Finish with parsley or wilted spinach if desired.
