Ingredients
- 1½ lbs chicken breasts or thighs
- Salt and black pepper
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup chicken broth
- ½ cup heavy cream (or half-and-half)
- ½ teaspoon Italian seasoning
- ¼ cup grated Parmesan
- Optional: spinach or basil
Instructions
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat.
- Sear chicken 4–5 minutes per side until golden. Remove and set aside.
- Add garlic to the pan and cook 30 seconds.
- Stir in tomatoes, broth, cream, and Italian seasoning. Simmer 3–4 minutes.
- Add Parmesan and stir until slightly thickened.
- Return chicken to the skillet. Simmer 8–10 minutes until cooked through.
- Fold in spinach or finish with basil if using.
