Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 cups mixed veggies (broccoli, bell peppers, carrots)
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 tsp paprika (optional)
  • Fresh parsley for garnish

Instructions:

  1. Prep chicken: Season chicken breasts with salt, pepper, and paprika.
  2. Cook chicken: In a large skillet, heat olive oil over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Cook veggies: In the same skillet, add butter and garlic. Sauté veggies 4–5 minutes until tender-crisp.
  4. Combine: Return chicken to the pan, toss everything together for 1–2 minutes to coat in garlic butter.
  5. Serve: Garnish with fresh parsley. Serve with rice, pasta, or crusty bread.

Quick Tip: For extra flavor, squeeze a little lemon juice over the chicken right before serving.
