Ingredients:
- 2 boneless, skinless chicken breasts
- 2 cups mixed veggies (broccoli, bell peppers, carrots)
- 3 cloves garlic, minced
- 3 tbsp butter
- 1 tbsp olive oil
- Salt & pepper to taste
- 1 tsp paprika (optional)
- Fresh parsley for garnish
Instructions:
- Prep chicken: Season chicken breasts with salt, pepper, and paprika.
- Cook chicken: In a large skillet, heat olive oil over medium heat. Cook chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Cook veggies: In the same skillet, add butter and garlic. Sauté veggies 4–5 minutes until tender-crisp.
- Combine: Return chicken to the pan, toss everything together for 1–2 minutes to coat in garlic butter.
- Serve: Garnish with fresh parsley. Serve with rice, pasta, or crusty bread.
Quick Tip: For extra flavor, squeeze a little lemon juice over the chicken right before serving.
